Peller Family icewine is a rare dessert wine produced from the juice of naturally frozen grapes that have been picked in the middle of a cold Canadian winter.  At 43 degrees, the Niagara Peninsula is within the same latitudinal range as Southern France, Rioja in Spain, Chianti Classico in Italy and Oregon. The Niagara Peninsula is the only place in the world where every single year the summers are so warm they can grow fine wine grapes, but the winters are cold enough to make Icewine (but never so cold that the vines do not survive.)  Using the ‘methode classique’, individual batches of Chardonnay and Pinot Noir are fermented in tank. A cuvee is made using a selection of these wines which are then bottled with yeast and sugar. After aging on the lees for approximately 30 months, the bottles are riddled, degorged and a dosage of Icewine (110ml) is added.


Very fine bubbles spiral upwards, through this brilliant yellow straw coloured wine. The bouquet of apricot, yeast and ripe apple, with hints of honey, are followed by tropical fruits on the palate and a refreshing sweet grapefruit finish. Enjoy before a meal with salty appetizers, during a meal with seafood or risotto or after a meal with fresh fruit and creamy cheese.

    The addition of ice wine to this sparkling wine really makes all the difference. Slightly sweeter than you're average fizz, I found it to be really versatile when pairing with food - either as an aperitif, with seafood or desserts.
